Frequently asked questions
Why does a US gallon differ from a UK gallon?
They were standardised separately. A US gallon is 3.785 litres and a UK (imperial) gallon is 4.546 litres — about 20% larger. The US gallon was based on a wine gallon, the imperial one on an ale gallon, and the difference never went away.
How much is one cup?
A US customary cup is 236.588 mL, a US legal cup is 240 mL, and a metric cup is 250 mL. Recipes from different countries assume different values, which is a common reason a converted recipe tastes slightly off. If precision matters, weigh the ingredients instead.
Is a fluid ounce a measure of weight?
No — it is a measure of volume. A US fluid ounce is 29.574 mL, while an ounce of weight is 28.3495 g. They share a name but measure completely different things, so never swap one for the other in a conversion.
